At Los Peperetes, the sea bass is carefully prepared by hand, with each fillet meticulously cleaned to remove skin and bones. The fish is then gently cooked to preserve its delicate texture before being elegantly arranged in the tin.
For this special recipe, the fish is accompanied by a traditional green sauce made with Albariño wine from the vineyards of Pazo de Rubianes, together with garlic, onion, parsley, and a subtle blend of spices.
