We present a remarkable pairing of two treasures from our region: prized Almadraba bluefin tuna ventresca and the exceptional butter of Airas Moniz.
For this special edition, olive oil is replaced by the “gold” of Ribeira Sacra. Handcrafted in Chantada from raw milk produced by free-range Jersey cows, Airas Moniz butter is renowned for its extraordinary creaminess and deep golden colour.
After being carefully cooked to preserve its delicate texture and natural succulence, the ventresca is gently covered with melted butter. Inside the tin, the two ingredients slowly meld together as the richness of the tuna intertwines with the sweet, silky character of the Jersey butter.
The result is an exceptionally refined balance of flavours and textures: the briny depth and gelatinous delicacy of the bluefin tuna softened by elegant milky notes and a velvety finish.
For the best experience, gently warm the tin in hot water for a few minutes before opening.
