At Los Peperetes, we source only the finest northern bonito, line-caught in the Cantabrian Sea and carefully selected for its exceptional size and freshness. The result is a delicate conserva of remarkable quality and flavour.
In our kitchen, each piece is meticulously cleaned, leaving the backbone intact during the initial preparation to preserve the fish’s texture and integrity. The bonito is then gently poached in salted water to achieve the perfect point of doneness before the bones are carefully removed by hand.
Combined with premium olive oil, this artisanal process gives our bonito del norte its tender texture and refined, delicate flavour.
