Ventresca (tuna belly) is the most prized and coveted cut of the Almadraba Bluefin Tuna. Prepared according to ancestral methods and crafted with the care and expertise of our artisans, each tin is a small gastronomic masterpiece.

Its exceptional marbling gives rise to a deep, refined flavor and an incomparable buttery texture distinguishes it from every other cut. Rich and delicate in equal measure, ventresca is widely regarded as the crown jewel of bluefin tuna.

Upon receiving the tuna at our facility, the belly is carefully separated and gently cooked to preserve its natural succulence. Each fillet is then meticulously cleaned and placed into the tin by hand before being covered with the finest olive oil to enhance its character and flavour.

Our Bluefin Tuna Ventresca in olive oil is made exclusively from wild bluefin tuna caught using the ancient and sustainable Almadraba fishing method.
