Variegated Scallops


As with other bivalves, they are submerged in seawater as soon as they reach the factory in order to clean any sand away. They are then steamed and manually shelled in order to be thoroughly cleaned and washed in brine.   These varieties are delicious served with their typical sauce, made from onions, pepper, tomatoe and olive oil.
