The secret behind keeping their full flavour lies in the preparation of the homemade marinade sauce, using a base of olive oil, vinegar, paprika and salt. Once the sauce has been prepared, the cleaned, cooked flesh is fried in olive oil, before finally adding bay leaves and cloves.
