Hake eggs in Partridge sauce

During the most appropriate time of the year we select the best specimens of this fish in the fish markets of Vigo and Coruña. Once in the factory they are cooked and cleaned. The eggs are removed manually and chopped into portions. As a cover liquid we use a homemade sauce based on olive oil, vinegar and a splash of wine, all seasoned with laurel.
